1 package blueberry muffin mix (I use Fiber One brand)
1/2 c. water
1/2 c. grated zucchini
1 ripe banana
1/4 c. egg substitute (i.e. Egg Beaters)
1 tsp. cinnamon
Combine all ingredients in a bowl.
Fill each muffin cup about 2/3 full.
Bake about 15 minutes.
For those of you who may think it’s a bit strange to put zucchini in a muffin with fruit, you really don’t even taste it. I think it still adds flavor to the muffin, but not really a “zucchini” flavor. If you’re adventurous enough to make it you’ll see (or taste rather).
